Calamari stew with garlic toast


If you are entertaining, this is a great idea for a dish. This easy recipe will have you wanting more!

Ingredients:


For the calamari stew:

  • 2 tbsp olive oil
  • 2 cloves of garlic, cut in half
  • 1 3/4 cups tomato sauce
  • 1 cup white wine
  • 1 tsp freshly chopped thyme leaves
  • 1 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 900g calamari, bodies sliced 

For the garlic toast:

  • 1 french loaf
  • Olive oil to drizzle
  • 2-3 whole garlic cloves

Calamari stew: Warm the olive oil over medium heat in a medium pot. Add the garlic and let it cook until fragrant (about 2 mins). Remove the garlic from the pot and add the tomato sauce, white wine, thyme, red pepper flakes, salt and pepper. Bring the mixture to a simmer, then add the calamari and stir to combine. Continue to cook until the mixture comes back up to a simmer, about 2 mins.

Garlic toast: Preheat the oven to 180C. Drizzle the bread slices with olive oil. Toast until the bread is crisp and turning golden, about 8-10 mins. Remove from the oven and rub the top of the toasts with whole garlic cloves. Serve immediately with the calamari stew.
