Cottage pie




The classic cottage pie is perfect comfort food. With this easy recipe you can make your old time favourite dish!

Ingredients:

  • 6 medium potatoes, peeled
  • 500g beef mince
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 125g mushrooms, sliced
  • 1 beef stock cube
  • 1/4 cup of water
  • 1 tbsp oil
  • 1 tbsp lemon and pepper seasoning/mix or any preferred seasoning
  • 4 tbsp tomato paste
  • about 1tbsp chopped thyme, oregano, and rosemary (or add how much you prefer) 
  • 1 tsp salt
  • pepper
  • 1/2 cup of grated cheese

Preheat the over to 180C. Peel the potatoes, then slice them in half and boil them until they are soft. Add the oil to a pan and fry the onions until they are soft. Next add the mince, lemon and pepper seasoning, stock cube and water to the pan. Once the mince is browned nicely, add the mushrooms, tomatoes, tomato paste, salt and the thyme, oregano and rosemary. Mix all this together well and then simmer it for 5-10 mins. Once everything is cooked, add the mixture to a round casserole dish. Mash the potatoes with a fair amount of butter and milk to get to a smooth consistency for a mash, add a bit of salt and pepper to bring out the flavour. Spread the mash evenly over the mince mixture and then sprinkle it with cheese. Place the casserole in the oven (about 20-30mins) until the cheese has turned a nice golden brown colour and enjoy!
