Doughnut muffins



What could be better than a muffin that tastes like a doughnut? Try out this delicious recipe! You won't be disappointed. 

Makes 12 muffins

Ingredients:

  • 175 g butter, softened
  • 200 g caster sugar
  • 2 large eggs
  • 375 g plain flour
  • 3/4 tbsp baking powder
  • 1/4 tsp bicarbonate of soda
  • pinch of salt
  • 1/2 tsp freshly grated nutmeg
  • 250 ml milk

Topping:

  • 100 g caster sugar
  • 1 tsp ground cinnamon
  • 25 g butter, melted


Preheat the oven to 180C. Grease a 12 cup muffin pan with butter, oil or with cooking spray. In a bowl beat the butter and sugar together until light and creamy. Add the eggs a little at a time, beating between adding them. Sift the flour, baking powder, bicarbonate of soda, salt and nutmeg together. Add half to the creamed mixture with half of the milk. Gently fold the ingredients together before incorporating the remaining flour and milk. Spoon the mixture into the muffins pans that you have prepared and bake in the oven for 15-20 mins until the muffins are light brown and firm to the touch.

For the topping, mix the sugar and cinnamon together. While the muffins are still warm from the oven, brush lightly with the melted butter and sprinkle the sugar and cinnamon mixture over. Enjoy it hot or cold!
