Shortbread Cookies


These buttery cookies are delicious and always a winner! And best of all it is cheap to make.

Makes about 24 cookies

Ingredients: 

  • 175 g butter, softened
  • 75 g caster sugar
  • 250 g plain flour
  • large pinch of ground cinnamon
Preheat the oven to 180C and line two baking trays with non stick paper. Beat the butter and the sugar until light and fluffy, and work in the flour and ground cinnamon to make a stiff dough. Working with your hands makes it easier. Turn the dough onto a lightly floured surface and knead it until it is smooth. Roll out to the thickness of about 3mm and using floured cookie cutters, cut out 24 cookies and re roll trimmings if needed. Transfer them to the prepared baking sheets and bake in the oven for 10-15 mins. Leave to cool on the baking sheets until they firm up. Add a bit of caster sugar on top to decorate and transfer the cookies onto a wire rack to cool off completely. And there you have it! Wonderful melt in the mouth cookies that everyone will enjoy.
