Easy microwave coffee cake



An easy recipe for beginner bakers!

Ingredients:

  • 175 g butter, softened
  • 175 g caster sugar
  • 3 eggs, beaten
  • 175 g self rising flour
  • pinch of salt
  • 15 ml instant coffee dissolved in 30 ml boiling water
Beat the butter and sugar together until light and creamy. Add the eggs and coffee mix and mix together well. Sift in the flour and salt and stir it in and mix it until properly combined. Place it into prepared microwaveable round dish ( wipe the dish with butter or place baking paper in the dish ) and smooth out the top. Microwave it for 6 1/2 to 7 1/2 mins. Let it cool off 10 mins before you place it on a wire rack to cool off.

Icing:
  • 75 g butter
  • 175 g icing sugar
  • 15 ml instant coffee dissolved in 30 ml boiling water
Beat the butter until light and fluffy and add sifted icing sugar by slowly. Add the coffee mix slowly  to have it thick enough and add how much by your liking.
