Chicken Schnitzel with creamy mushroom sauce and buttered veggies



This mouthwatering mushroom sauce for the schnitzel will make you want more! Spoil a loved one with this great dish :)

Ingredients:

  • 2 big chicken breasts
  • 3/4 cup flour
  • 2 large eggs, beaten
  • 2 tbsp water
  • 1 cup plain breadcrumbs
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 cup oil

Sauce:

  • 2 tbsp butter
  • 125 g mushrooms, sliced
  • 1 tsp chopped garlic
  • 1 cup chicken broth/stock
  • 1 tbsp Worcestershire sauce
  • 1/3 cup sour cream
  • 1 tbsp chopped parsley or origanum to garnish

Slice each chicken breast half lengthwise. Place them between pieces of plastic wrap and pound them with a mallet until they are about 7mm or 1/4 inch thick. Set up 3 big shallow plates or bowls. Put the flour in one and season it with salt and pepper, place the eggs and the water in another dish and the breadcrumbs in the 3rd. Dip and cover the chicken pieces in the flour mix, then dip it in the egg wash and then the breadcrumbs. In a large skillet/pan/wok over medium heat add the oil and when the oil is hot add the chicken and cook it until it is golden brown on the side, about 4 minutes per side. Drain the chicken on a paper towel and keep it warm while you make the sauce or make the sauce while you cooked the chicken.

For the sauce:  In a another pan/skillet over medium heat add the butter. When it is melted, add the mushrooms and season them with salt and pepper. Cook until they are browned, about 6 mins. Add the garlic and cook for 30 seconds and then add the stock and simmer for 4 mins and reduce by one third. Add the Worcestershire sauce, turn off the heat and let cool for a minute before stirring in the sour cream. Serve the schnitzel with the sauce poured over and garnish it with the herbs.



  • While you prepare and cook all the ingredients boil some chopped vegetables like broccoli, cauliflower, baby corn, carrots, butternut or any other vegetable in water in a pot on the stove. Once ready drain the veggies and place back into the pot and mix some butter into the pot to coat the veggies and add salt and pepper to taste. Serve with the schnitzel And there you go, a wonderful meal to share with someone!
