Cinnamon muffins

Fragrant cinnamon muffins with a sugary coating


Makes 12 muffins

Ingredients:

  • 7 tbsp butter, softened
  • 2/3 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 cup buttermilk
  • 2 tsp vanilla essence

For the topping:

  • 1/3 cup sugar
  • 1/2 Tbs ground cinnamon
  • 2 tbsp butter, melted
Preheat an oven to 180C. Grease a 12 cup muffin pan with butter or line them with cupcake papers. Cream together butter and sugar with an electric mixer until light and fluffy. Beat in egg and mix until pale and smooth. In a separate bowl, whisk together flour, baking powder, baking soda, salt and nutmeg. Add dry ingredients to wet ingredients in at least two parts, alternating with the buttermilk and vanilla. Do not over-beat. Batter may be slightly lumpy. Spoon batter into muffin cups evenly. Bake until a toothpick comes out clean, about 20 minutes. Transfer to a cooling rack and let sit for at least 5 minutes. 

Topping - In a small bowl mix together cinnamon and sugar with a fork. Using a pastry brush, lightly apply butter to the top of a muffin and dip it in the cinnamon-sugar mixture. Set aside and repeat with remaining muffins. Best served when hot. Store any leftovers in an airtight container.
