Ingredients
- 2 eggs
- 2 egg yolks
- 100g (1/2 cup) caster sugar
- 125ml (1/2 cup) lemon juice
- 50g unsalted butter, chopped
- 1 teaspoon finely grated lemon rind
and rind. Cook, over medium heat, stirring constantly, for 4 minutes or until thick. Remove from heat and strain Through a sieve into a bowl. Cover and place in the fridge for 2 hours or until chilled.
