Homemade lemon curd

Make your very own flavourful and zingy lemon curd with this super easy recipe! 

Ingredients

  • 2 eggs
  • 2 egg yolks
  • 100g (1/2 cup) caster sugar
  • 125ml (1/2 cup) lemon juice
  • 50g unsalted butter, chopped
  • 1 teaspoon finely grated lemon rind
Whisk the eggs, yolks and sugar together in a small saucepan. Stir in the lemon juice, butter
and rind. Cook, over medium heat, stirring constantly, for 4 minutes or until thick. Remove from heat and strain Through a sieve into a bowl. Cover and place in the fridge for 2 hours or until chilled.
