Speckled egg cupcakes

A good idea for fun Easter, birthday parties, baby showers, etc. These fun cupcakes will brighten up any event!



Makes 12 cupcakes

Ingredients:

  • 1 2/3 cups cake flour
  • 1 cup sugar
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup salted butter (170g), room temperature 
  • 3 egg whites
  • 3 tsp vanilla extract
  • 1/2 cup buttermilk (you can use sour cream or plain yogurt too)
  • 1/2 cup (milk
Butter cream Icing: 

  • 2 cups sifted icing sugar
  • 1/2 cup butter, softened
  • 2 tbsp milk
  • Green food colouring gel
  • Flake or grated chocolate
  • Speckled eggs

Preheat oven to 180 degrees. Whisk together flour, sugar, baking soda and baking powder in a large mixing bowl. Add butter, egg whites, vanilla, buttermilk and milk and mix on medium speed just until smooth. Do not over mix. Fill cupcake liners a little more than half way. Bake 18-20 minutes. Allow to cool for 1-2 minutes, then remove to cooling rack to finish cooling.



To make the icing:

Add icing sugar and beat it for a bit. Then add milk. Beat it until it becomes fluffy and creamy. Add green food colouring (start with small amounts to make sure of desired shade of icing. Spread icing over cupcakes, sprinkle flake or grated chocolate over and spread to form a nest like shape on the icing. Finish it off by placing the speckled eggs on the flake nest
