6 Minute microwave chocolate cake with rich chocolate icing


Want to make a quick, but still delicious chocolate cake? Here's a perfect recipe to get you started on baking!

Ingredients:

  • 250 ml cake flour
  • 250 caster sugar
  • 15 ml baking powder
  • 3 ml salt
  • 45 ml cocoa powder
  • 250 ml lukewarm water
  • 15 ml oil
  • 2 eggs
  • 5 ml vanilla essence

For the topping:

  • 150 g sifted icing sugar
  • 45 ml cocoa powder
  • 60 g butter
  • 45 ml black coffee or water
  • Chopped almonds

Prepare a microwavable cake dish with butter or with baking paper. Sift the dry ingredients together. Beat the lukewarm water, oil and eggs in a separate bowl. Next add the mixed water, oil and eggs to the dry ingredients and beat it until it is mixed well. Add the vanilla essence and beat the mixture again. Pour the mixture into the prepared dish and bake it in the microwave for 6 minutes on high. Let it stand for 2 mins before taking the cake out to cool. 

Icing: Cream the butter. Sift the cocoa and icing sugar together and then add it to the creamed butter. Beat the mixture and add coffee or water to make it a soft and creamy consistency. Next put some baking paper onto a pan to cover it. Add the almonds to the pan and toast them a bit with some salt. When they are nicely light brown take them off the stove. Ice the cake with chocolate icing when the cake has cooled and add the nuts on top for a nice nutty flavour and crunchy texture!
