Butter chicken with vegetables


This is one of my favourite dishes! Butter chicken is delicious if home made and here is a easy recipe for it. Add some veggies and it's a wonderful meal!

Ingredients:

  • 150 ml water
  • 1 tin tomato puree
  • 10 ml paprika
  • 1 bay leaf
  • 1 cinnamon stick
  • 5 ml cardamon
  • 1 onion, finely chopped
  • 15 ml sunflower oil
  • 60 g butter
  • 2 chicken stock cubes
  • 250 ml cream
  • 10 ml salt
  • 125 ml plain yogurt
  • 15 ml lemon juice
  • 5 ml turmeric
  • 10 ml garam masala
  • 5 ml chilli powder
  • 5 ml cumin
  • 10 ml crushed ginger
  • 10 ml crushed garlic
  • 800g chicken fillets, cut into strips

Combine the yogurt, lemon juice, turmeric, garam masala, chilli powder, cumin, ginger and garlic in a bowl. Add the chicken fillet strips and stir it well. Cover and let it marinade in the fridge for atleast 30 mins. Heat butter and oil in a pan over medium heat. Add the onion, cardamon, cinnamon and bay leaf and cook for 2 mins until the onion starts to soften. Reduce heat to low, then add the chicken and marinade, paprika, tomato puree, water and the stock cubes. Simmer for 15 mins then stir in the cream and cook for a further 10 mins on a low heat. Serve with some rice and some steamed or boiled veggies, such as broccoli, cauliflower, carrots, butternut or any other preferred vegetable, and enjoy!
