Lemon & Poppy seed muffins


An easy way to make a delicious muffin without having to go buy expensive ingredients!

Makes 12 muffins

Ingredients:

  • 175 ml sunflower oil
  • 225 g plain flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 225 g caster sugar
  • 1 large egg
  • 1 large egg white
  • 150 ml milk
  • 1 tbsp lemon juice
  • 1 tbsp grated lemon rind
  • 3-4 tsp poppy seeds
  • Another 2 tsp grated lemon rind to decorate

Preheat an oven to 190C. Line a 12 cup muffin pan with 12 paper muffin cases. Sift the flour, baking powder and salt into a mixing bowl. Then add the caster sugar and stir it together. In a separate bowl, whisk the egg, egg white, oil and milk together, then stir in the lemon juice and rind. Add the egg mixture to the flour mixture then add 2 tsp poppy seeds and gently stir it together, do not overstir the mixture. Divide the mixture evenly between the muffins cases then sprinkle over 1-2 tsp of poppy seeds and the lemon rind. Bake in the oven for 20-25 mins until light brown and risen. Place them onto a wire rack to cool down. These muffins are amazing eaten warm or cold!
