Moist walnut cupcakes



These cupcakes are super moist and delicious! And the best part is, it is easy to make. Treat your friends with these perfect treats.

Makes 12 cupcakes

Ingredients:

  • 85 g walnuts
  • 55 g butter, softened
  • 100 g caster sugar
  • grated rind of 1/2 a lemon
  • 70 g self-raising flour
  • 2 eggs
  • 12 walnut halves to decorate

Frosting:

  • 55 g butter, softened
  • 85 g icing sugar
  • grated rind of 1/2 a lemon
  • 1 tsp lemon juice

Preheat the oven to 190C/375F.
Put 12 paper baking cases in a muffin pan. Put the walnuts in a food processor and blend until finely ground, don't over mix or it will become oily. Add the butter, sugar, lemon rind, flour and eggs and blend until evenly mixed. Spoon the mixture into the paper cases.

Bake the cupcakes for 20 mins or until well risen and brown. Transfer to a wire rack to cool.

For the frosting, put the butter in a bowl and beat until fluffy. Sift in the icing sugar, add the lemon rind and juice and mix well. When the cupcakes are cold, spread a little frosting on top with a walnut half to decorate.
