Chicken fried rice


Feeling in the mood for some Chinese? Make your very own meal with this easy recipe. 

Ingredients:

  • 4 cooked and cubed chicken breasts
  • 4 garlic cloves, chopped
  • 1/2 cup of soy sauce
  • 1 bunch of spring onions, finely chopped
  • 1/2 cup cooking oil
  • 1 1/4 cup white rice
  • 2 1/2 cup water
  • About 500 g vegetables (carrots, broccoli, cauliflower, baby corn or any other preferred veggies)
  • 3 eggs, beaten

Marinade the chicken in the soy sauce and garlic for 3 - 4 hours. In a large wok heat up the oil and lightly brown the onion. Add rice and cook until brown, stirring occasionally. Add the chicken and cook for 3 - 4 mins. Add the water and vegetables and stir. Bring to the boil then reduce the heat and simmer for 20-30 mins. Add the eggs and stir through the mixture. They will cook from the heat off the vegetables. Garnish with some finely chopped chives.
