Try out these wonderful nutty muffins! Warm them up the day after and serve with butter
Makes 12 muffins
Ingredients:
- 225 g plain flour
- 2.25 tsp (11.25 ml) Baking powder
- A big pinch of salt
- 105 g caster sugar
- 170 g pecan nuts, roughly chopped
- 3 bananas
- 7 1/2 tbsp (112.5 ml) milk
- 37.5 g butter
- 1 1/2 - 2 eggs, beaten
- 2.25 tsp (0.75 ml) vanilla essence
Preheat the oven to 190C. Place 12 muffin paper cases in a muffin pan. Sift the flour, baking powder and salt into a bowl, add the sugar and pecan nuts and stir to combine. Place the mashed bananas, milk, butter, egg and vanilla essence in a separate bowl and mix together. Add the wet ingredients to the dry ingredients and gently stir until just combined. Divide the mixture evenly between the muffin cases and bake for 20-25 mins or until well risen and golden. Remove the muffins from the oven and place them on a wire rack to cool. And it's as simple as that!
