Peanut butter cupcakes with cream cheese frosting


These amazing cupcakes will crave you for more! The cream cheese frosting is wonderfully creamy and tangy. Licking out the bowl is the best part ;)


Makes 16 cupcakes

Ingredients:

  • 55 g butter, softened
  • 225 g brown sugar
  • 115 g crunchy peanut butter
  • 2 eggs, beaten
  • 1 tsp vanilla essence
  • 225 g plain flour
  • 2 tsp baking powder
  • 100 ml milk

Frosting:


  • 200 g cream cheese
  • 25 g butter, softened
  • 225 icing sugar
Preheat the oven to 180C. Place muffin cases into a muffin pan. Put the butter, sugar and peanut butter in a bowl and beat together for 1 -2 mins, or until well mixed. Gradually add the eggs, beating well after each addition, then add the vanilla essence. Sift in the flour and baking powder and using a metal spoon, fold them into mixture, while adding the milk. Spoon into the muffin cases and then bake the cupcakes for about 20 mins or until well risen and golden brown. Transfer to a wire rack to cool. 

Frosting:      Put the cream cheese and butter in a large bowl and beat it with a mixer until smooth. Sift in the icing sugar into the mixture, then beat together until well mixed. When the cupcakes are cold, spread the frosting onto the cupcakes with a knife. Store the cupcakes in the refrigerator until ready to serve.
