Colourful buttercream cupcakes

These brightly coloured cupcakes are great for birthday parties or events. Play around with different colours to fit the theme of your event



Makes 12 cupcakes

Ingredients:

  • 1 2/3 cups cake flour
  • 1 cup sugar
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup salted butter (170g), room temperature 
  • 3 egg whites
  • 3 tsp vanilla extract
  • 1/2 cup buttermilk (you can use sour cream or plain yogurt too)
  • 1/2 cup (milk
Butter cream Icing: 

  • 2 cups sifted icing sugar
  • 1/2 cup butter, softened
  • 2 tbsp milk
  • Yellow and blue food colouring gel

Preheat oven to 180 degrees. Whisk together flour, sugar, baking soda and baking powder in a large mixing bowl. Add butter, egg whites, vanilla, buttermilk and milk and mix on medium speed just until smooth. Do not over mix. Fill cupcake liners a little more than half way. Bake 18-20 minutes. Allow to cool for 1-2 minutes, then remove to cooling rack to finish cooling.


To make the icing:
Add icing sugar and beat it for a bit. Then add milk. Beat it until it becomes fluffy and creamy. Separate icing to different bowls and mix in yellow and blue to each bowl (start with small amounts to make sure of desired shade of icing. Put icing into piping bag fitted with desired nozzle. Pipe icing on your cupcakes and decorate with different sprinkles and toppings. Stick custom labels to tooth picks and insert into cupcakes for a fun look!
