Here's a simple and easy cocoa muffin to try out.
Makes 12 muffins
Ingredients:
- 250 g self raising flour
- 1 tsp baking powder
- 25 g cocoa, sifted
- 125 g caster sugar
- 2 large eggs
- 100 ml sunflower oil
- 150 ml milk
- 75 g chocolate chips
Preheat the oven to 180C and line a 12 hole muffin pan with paper cases. Sift the flour, baking powder and cocoa into a bowl, then stir in the sugar. Beat together the eggs, oil and milk. Add the beaten egg mix to the flour mix and stir well until combined but do not over mix. Fold in the chocolate chips. Spoon in the paper cases and bake in the oven for 20 - 25 mins until well risen and firm to the touch. Leave in the pan to cool for 5 mins before placing them on a wire rack. Enjoy them hot or cold! Always a nice treat with a cup of coffee.
